This preserved cabbage is fermented traditionally - as whole cabbages in barrels, a tradition unique to Romania. Once fermented the cabbage is shredded, jarred and stored in brine, the resulting product is also well known as sauerkraut in German.
This type of cabbage is extremely popular in Romania, not only is it used as a side dish but also as an ingredient in many popular, traditional dishes such as the famous Romanian cabbage rolls 'sarmale'.
