Long, harsh winter with frequent sub freezing temperatures and short, warm Romanian summers have founded a cuisine that has a need for preserving foods.
In this collection you will find a delicious array of the country’s favourite vegetable based preserves. ‘Zacusca’ probably winning first place is a vegetable based spread made from aubergines, peppers, tomatoes & onions, cooked slowly for hours over a wood fire in a cauldron like pan known as a ‘ceaun’.
