In this hand foraged mix, honey mushrooms, pine boletes, parasol mushrooms and red-capped scaber stalks are brought together and pickled in small batches, each piece cut just enough to keep its shape, texture and true forest identity.
Here apple cider vinegar and acacia honey replace refined sugar, balancing the earthy depth of the mushrooms with a sweet-sour bring spiced with mustard seeds, bay leaves, coriander seeds and Celtic salt. The result is an aromatic, tangy, lightly spiced mix that carries the essence of the autumn forest. Perfect with steaks, roasted vegetables or rustic meals, this pickle adds not just decoration, but a whisper of the woods themselves.
