Green walnut jam is one of the most cherished and loved delicacies of Romanian foods. With a flavour that evokes many childhood memories and a scent that may remind many of their grandmothers kitchen. Rich, dense & delicious candied walnuts in a sweet, runny syrup.
This jam is made when the walnuts are young, before the shell is completely formed, normally around the beginning of June. It is considered a luxury preserve and was traditionally brought out only for special occasions or when there were guests in the house. Romanian jams known as 'dulceața' were traditionally served to guests with coffee, straight from the spoon.
To make green walnut jam is painstakingly time consuming and for this reason, along with the very short period of time you can harvest these green walnuts, these days the jam can be quite difficult to come by. It really is a labour of love. Prepared in the traditional way, in a cauldron style pan over a wood fire.
We love this either straight from the jar with a strong coffee or served in the morning with fresh bread and 'urda', a Romanian cheese very similar to ricotta.
