'The Game Changer'

A traditional vegetable preserve known as 'zacusca' made from flame cooked aubergines & kapia peppers, onions, tomatoes, oil & seasoning. Prepared in the traditional way - over a wood fire in a cauldron like pan known as a 'ceaun'. 100% natural and free from additives.

Made at the end of every summer to preserve the seasons beauty and to enjoy the deliciousness of summer through the winter months. We love this served on fresh bread as a snack or appetiser or as part of a platter with local cheese and cold cuts.

Made by hand by four housewives from the village of Idicel in North Transylvania, who ensure the wood fire is prepared for baking the aubergines & peppers until the skin burns. It is a complex process with many stages before you arrive with the final delicious product. After cooking the vegetables on the fire they must be cooled, cleaned and prepared, which is a lot of manual work. When the ingredients reach the cauldron, everything starts to come together, it is then down to the housewives to ensure the fire remains exactly as needed.

Store in a cool dry place away from direct sunlight. Refrigerate once opened.
