Coconut Bread

This is that simple but fabulously tasty & comforting bake that you can make with no special occasion required. A gorgeous, golden loaf that is so easy to make, no fancy equipment needed and only pretty standard storecupboard ingredients.

Coconut bread, whipped ricotta & jam

It is fantastic served fresh from the oven - still warm, with a beautiful smell of coconut, vanilla and cinnamon circulating the air, but even better the next day toasted and spread with butter or served as here with a beautiful whipped ricotta/ ‘urdă’ cheese and jam. Call it breakfast, brunch, dessert or midnight snack - no judgements here! :)

Urd is a type of fresh whey cheese produced in Romania with a smooth, crumbly texture similar to a ricotta cheese. It is often used to major fillings for desserts and pastries. For this recipe we whipped some urdă cheese with a touch of sour cream, lemon zest, lemon juice & a sprinkle of sugar.

2 large eggs
295ml milk
1 tsp vanilla paste
315g plain flour
1/2 tsp salt
2 tsp baking powder
1 tsp ground cinnamon
200g sugar
140g desiccated coconut
85g unsalted butter, melted or melted and browned, if desired


  1. Heat oven to 180C/ 160C Fan/ Gas mark 4. Grease a 9×5-inch loaf tin.
  2. In a small bowl, whisk together eggs, milk and vanilla.
  3. In a medium bowl, sift together flour, salt, baking powder and cinnamon. Add sugar and coconut, and stir to mix.
  4. Make a well in the centre and pour in egg mixture, then stir wet and dry ingredients together until just combined. Add butter and stir until just smooth — be careful not to overmix.
  5. Pour batter in tin and bake for 60 to 75 minutes, until a toothpick inserted into the centre comes out clean and the top of the cake is golden.
  6. Cool in pan five minutes, before turning out onto a cooling rack.
  7. Serve in thick slices fresh or toasted with butter or jam.
